I recommend using a Vitamix for this tasty and satisfying soup.
Ingredients:
2 cups pure water
1 whole scallion (including roots!)
4 whole fresh tomatoes
1/4 red bell pepper (including stem and seeds)
1-2 stems of basil (including stems)
1 medium carrot
A handful of cabbage
1 stalk of celery
1 clove garlic
2 handfuls of cashews
1-2 pinches of Celtic sea salt
Place in the order listed into the Vitamix. Blend on low until combined. Then blend on high until steamy (about 5 minutes).
