Real Food Recipe: Hot Pink Breakfast Smoothie

Our patient, Peggy, shared this delicious smoothie recipe with us. For those on the Purification Program, leave out the cashews and substitute the meat from a fresh young (Thai) coconut and use the fresh water from the young coconut instead of bottled or canned.

1.5 cups coconut water (juice from a young coconut)

1 lg carrot, cleaned and cut into pieces (or 5-6 baby carrots)
1/4 of a medium sized beet, raw, peeled
1/4 cup cashews (or meat from one young coconut)
1/4 cup chopped dates
2 tsp real vanilla
12 frozen strawberries
Optional: 2 scoops SP Complete
Optional: 2 scoops Whey Pro Complete
(other optional add-ins are 2 Tbsp hemp protein, kefir, or yogurt)

Puree all ingredients except the strawberries in high powered blender for 90 seconds. Add strawberries and puree on high until smooth. Enjoy!
